Amazing Cheesy Garlic Chicken – And It’s Healthy Too!
I know people throw the word “Amazing” around a lot when talking about recipes but this is amazing cheesy garlic chicken. The original recipe can be found here, I have made a few changes to make it healthier, but still Amazing! It’s also simple to make, even on a busy night. Be sure to remember to turn on the oven so it’s preheated when your ready. Beware of the garlic too. While the original recipe calls for 5 minutes in butter I find 3-4 is sufficient. Melt the butter on medium low and bee sure to stir while it is cooking. Amazing cheesy garlic chicken doesn’t taste to amazing when it has burnt garlic. I love garlic. The recipe call for 4 cloves, I upped it to 6 here but in all honesty I use 8!
Ingredients
1/2 cup butter
6 cloves garlic
1/2 cup flaxseed meal
1/2 cup freshly grated parmesan cheese
1 cup shredded Cheddar Cheese
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/8 teaspoon salt
8 skinless, boneless chicken breast halves – pounded thin
1 cup shredded Dayla Cheddar style shreds (dairy free)
Directions
Preheat oven to 350 degrees F (175 degrees C).
Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 4 minutes.
In a shallow bowl, mix the flaxseed meal, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9×13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
