Hazelnut Chicken Tastes Great And Healthy
This is a really good and easy recipe. Hazelnut chicken is not completely low fat but this recipe makes it as close to possible without killing the taste. You can find the regular recipe here. Anytime you can find a recipe for boneless, skinless chicken breast that you like, use it. High in protein and omega 3’s, this is my go to. Flax meal is a great substitute for bread crumbs, healthier and tastes really good. Hazel nuts can be a pain to grind but with the effort. I like to roast them first as it makes removing the skin super easy. Do a large quantity then store them in a seal proof container for later use with other meals. Below is my healthier version of Hazelnut Chicken-
“Boneless breast of chicken, lightly breaded and sautéed with brandy and Frangelico (a hazelnut liqueur).”
Ingredients
1 cup Flax meal
1/2 cup roasted/grounded hazelnuts
4 skinless, boneless chicken breasts
1 egg, beaten
1/8 cup real butter
8oz fresh mushrooms, sliced
1 1/2 fluid ounces brandy
2 fluid ounces hazelnut liqueur
Directions
In a shallow dish or bowl, mix together bread crumbs and hazelnuts. Dip chicken breasts in egg beat, then in crumb/nut mixture to coat. In a large saucepan, melt butter or margarine over medium high heat. Brown chicken on both sides. Add the mushrooms, and a little more butter or margarine if necessary. Sauté until mushrooms are soft, about 2 minutes.
Remove saucepan from heat and add the brandy. Light with a match, let flame evaporate alcohol. When flame goes out, add hazelnut liquor. Light with a match and let flame evaporate alcohol. When flame goes out, return saucepan to heat and simmer to reduce liquid/sauce until it is thick. Then serve!
