Grain and Dairy Free Pancakes – So Good You’ll Make Them, Again and Again
One of the great myths of getting processed sugars and grains out of your life is you have to give up taste. This recipe by Ashley Thomas of My Heart Beats shows it’s simply not true! I love these grain and dairy free pancakes. Make sure you cook them in grass fed butter and use Organic, pure maple Syrup. For me, instead of using Coconut milk, I prefer using Silk Protein Nut Milk. It has 10 grams of Protein and I enjoy the flavor more.
Paleo Pancakes (Grain-Free, Dairy-Free)

Serves: 7 small, fluffy & filling pancakes
Ingredients
½ cup almond flour
½ cup tapioca flour or arrowroot flour
3 tablespoons coconut flour
1 teaspoon baking soda
2 eggs
½ cup coconut milk, canned and full-fat
Instructions
Preheat a seasoned crepe pan over low heat (I have and LOVE this pan).
Combine all of the ingredients together in a blender and combine well.
Pour ¼ cup batter onto a crepe pan over low heat.
Once the batter begins to bubble at the top, flip it over and cook for another 1-2 minutes.
Repeat until the batter is done.
